To buy beef tallow, there are three routes: ask your butcher for kidney fat (suet), order raw or rendered tallow from a producer or an online butcher, or choose ready-to-use tallow as a block or in a jar. Where to buy beef tallow?

You can find beef tallow at an independent butcher (to order), from producers and online butchers, at the traditional butcher counter of some supermarkets on order, and in shops that sell ready-rendered tallow.5 The best channel depends on what you want: raw fat to render yourself, or ready-to-use tallow.

Tallow, suet, “blanc de bœuf”: what should you ask for?

Suet is the raw fat that surrounds the kidneys; tallow is that fat once rendered and filtered.6, 8 “Blanc de bœuf” is the Belgian name for the best variety of tallow, the one from the kidneys, used for chips6. Lard, meanwhile, is pork fat; in German, “Schmalz” means lard or goose fat, whereas beef fat is called “Rindertalg” or “Rinderfett”7.

Which format to choose: raw, block or jar?

Choose raw fat if you like rendering it yourself and watching your budget, the rendered block if you want to save time and measure out by the slice, and the glass jar if you cook every day. Here is what sellers offer today:

How do you compare the price per kg?

In October 2026, a kilogram of beef tallow costs from €7.50 (raw minced fat) to nearly €40 (330 g organic jar), and most organic farm rendered tallows sit between €19 and €29 per kg.1, 2, 4, 9, 10, 13

The price per kg is calculated by dividing the VAT-inclusive price by the net weight in kilograms; it is the unit price that European Directive 98/6/EC asks sellers to display, and the only figure that lets you compare a 330 g jar with a 1 kg block.18 Three points make the comparison fair.

  • Compare raw with raw, rendered with rendered. A kilogram of raw fat gives about 700 to 800 g of tallow5: €7.50 per kg of raw fat therefore equals about €9.40 to €10.70 per kg of rendered tallow, before delivery and before the time and energy of melting.
  • Add delivery. For 2 kg of raw fat at €14.99 and €10 delivery, you reach €12.50 per kg delivered4.
  • Look at the tiers. At one seller, six jars at €69.99 work out at €35.35 per kg, against €39.36 for a single jar13.

These gaps are explained by the format (raw or rendered), the farming method, the glass packaging and the cold chain. A higher price per kg often buys time saved; a lower one, time spent melting. What should you read on a product page?

A complete tallow product page generally gives eight pointers: format and price per kg, stated use, origin, farming method, batch number, date and storage, packaging and ingredient list. Here is how to read them.

  1. Format and unit price. Net weight and price per kg make comparison possible18.
  2. Stated use: cooking, soap, balm or homemade cosmetics. European rules govern rendered fats intended for food16 and animal by-products intended for cosmetics17 separately: the page must therefore say clearly what the product is intended for, as ours does.
  3. Origin. The mandatory origin labelling of Regulation (EC) No 1760/2000 applies to beef14: for rendered tallow, naming the country is most often voluntary information from the seller. It is read on the product page, and do not hesitate to ask the seller for it.
  4. Farming method. Organic is recognised by the EU organic logo, the control body code and the statement “EU Agriculture” or “non-EU Agriculture”15. “Grass-fed” is a statement by the seller: it refers to a specification you can ask for (Label Rouge beef, for example, requires at least 5 months of grazing a year28).
  5. Batch number. It links the jar or block to its production.
  6. Date and storage. A clear date and storage temperature, before and after opening, make the purchase easier to plan9, 12.
  7. Packaging. Glass, vacuum or paper: the more it protects from air and light, the better the tallow keeps.
  8. Ingredient list. Short and readable: that is the best sign.

How much should you buy for each use?

One kilogram is enough to pour a soap (500 g, about 6 bars of 100 g) and whip a balm (250 g, over 300 g of balm); deep-frying calls for around 1.3 kg of tallow. Here are the orders of magnitude:

With 4 blocks of 250 g, you can for example pour a soap (2 blocks), prepare a whipped balm (1 block) and keep the last block for cooking or a lip balm. This portioning is the whole point of our separate blocks.

How should you store tallow?

Tallow keeps well in a closed container, in a cool place and away from light: according to Montana State University Extension, it keeps for months in the fridge and up to a year in the freezer.19 It is rich in saturated fatty acids (about 58 % according to this source, with 35 % monounsaturated and 2 % polyunsaturated)19; it is the unsaturated fatty acids, however, that oxygen, light and metals slowly oxidise21. The Codex Alimentarius standard describes tallow as dominated by palmitic (20 to 30 %), stearic (15 to 30 %) and oleic (30 to 45 %) acids20. A 2025 study, carried out on a fractionated and flavoured tallow, found the best stability in a closed container, protected from light, at 4 °C22.

Four simple habits keep tallow fresh for longer:

  • A closed glass container, opened as little as possible.
  • A cool, dark place: away from light, heat and air, a fat keeps all its freshness23.
  • A clean, dry spoon each time you take some.
  • Filtering before reusing a frying bath24.

In small cubes or wrapped portions, tallow is easy to take out, from the fridge or the freezer.

To freeze, divide the rendered tallow into an ice cube tray, then transfer the cubes to a freezer bag: you take out the dose for the day24. For a block you have started, we advise rewrapping it in its paper, then keeping it in a closed box in a cool place.
